El Angel Smoked Paprika Dulce Can – Spanish paprika (Pimenton) is a traditional product of designation made from the milling of different varieties of red peppers, normally from either ocales, jaranda, jariza, jeromin and bola varieties or a mixture. It is grown and produced exclusively in the region of Extremadura in Spain. The peppers are smoked by the growers before being sent to the factory where they are ground in ancient stone mills. This coarse ground pimenton is smoky with a pleasant warmth. It has a high colouring characteristic and it is known to be the main secret to Spanish charcuterie, such as chorizo sausages and lomo iberico.

Catala Paella Rice 1kg – Short-grain rice is the most common type of rice in Spain. Also known as paella rice, this type of short and rounded rice is especially selected from varieties such as bahia and senia which originate in Valencia. It is only the best selected grains that can offer the best paella and rice dishes. This type of grain has the characteristic of absorbing more than other types of rice, the flavours of the stock in which it is cooked, making it the ideal type of rice for cooking the perfect paella.

Murillo Viteri Crianza 2019 – This Rioja crianza is made from selected grapes that belong to family vineyards that are over 35 years old. The wine is then aged for 14 months in American oak, followed by 8 months in deposit to blend properly all of its aromas and finished for 6 months in bottle, so the wine is perfectly rounded. This is a light and elegant crianza, that invites anyone to go on drinking. It has a dark ruby colour with purple hints. On the nose, the wine has a good level of fruit with notes of fine wood and vanilla. On the palate, the wine is well-rounded with a good structure and a very pleasing long after taste.

Lavirtu Sauvignon Blanc – Pale yellow with greenish reflections, clean and bright. The nose is exotic, we can find aromas such as passion fruit and lychee, mixed with citrus notes and stone fruits, such as peach. On the palate it has a very lively and fresh entry, with good acidity and a round finish.

Agusti Torello Mata Balsamic Cava Vinegar

FOOD DESCRIPTION

Agusti Torello Mata Balsamic Vinegar is made out of sweet cava aged between 12 and 16 months. This cava is then aged in oak barrels that have carefully been filled up to 2/3 of their capacity. This creates a surface on which a veil can form of acetobacter, a bacteria which transforms alcohol into acetic acid. The process takes 2 years of barrel ageing to obtain this special vinegar.

Celler Kripta Barrica Gran Reserva has a light straw colour with green hues. Fine and abundant bubbles with well-developed bead. Intense green apple notes with a delicate, balmy, toasted and spicy touch produced by the barrel. The finish is dry and rich in flavour with dense and creamy froth. The freshness of the fruit and the balmy notes stands out against a toasted and vanilla background. 40% of the basic wine is fermented and aged for 8 months in French oak barrels. This Cava has a minimum ageing of 30 months. A limited production with numbered bottles.

FOOD PAIRING

Ideal as an aperitif. Goes well with Iberian ham, seafood, fish in sauce, risottos, poultry, smoked food, foie-gras, white and red meat and semi-cured cheeses.

Celler Kripta Franc Reserva is a ligth straw colour with green hues. This cava has slow-evolving fine and persistent bubbles with good bead formation. Clean and very fruity with an apple touch and caramel notes against a mint and balmy background of fresh herbs. The finish is elegant and balanced, fruity and fresh with ripe apple and syrup notes. Very well-integrated bubbles with an excellent sugar-acidity balance. Long and delicate aftertaste. Limited production with numbered bottles and minimum ageing of 24 months.

FOOD PAIRING

As an aperitif. Also perfect to accompany ham, cured meats and sausages, seafood, fish with sauce, rice, poultry, meats, semi cured cheeses and desserts.

Catala Bomba Rice 1kg

Bomba rice belongs to the family of Japonica rice, a short and rounded grain, which tends to elongate during cooking. Its production is centred on the Mediterranean region.

Bomba rice absorbs liquid up to the point of doubling in volume. Thus, it retains the flavour of stock in a manner similar to other varieties from Valencia but with the advantage that, unlike other varieties, if you exceed the cooking time it doesn’t start breaking up but becomes bomb shape, hence its name.

This means the starch remains within the grain, so it always stays loose, without caking and each grain remaining distinct. This makes it the king rice for perfect paella or risotto style dishes. Despite all these virtues, it is a variety which until recently was almost extinct due to low productivity and the intense care it needs.

Molineta Spanish Saffron 2g

WHAT IS SAFFRON:

Saffron is considered to be the King of the Spices. It is obtained from the saffron flower, and more precisely from the three red stigmas. These stigmas have to be hand-picked and toasted almost immediately, a process which is unique and characteristic of La Mancha area. This peculiarity, together with soil and weather conditions allows saffron from La Mancha to be considered the best in the world. From the very heart of La Mancha, Molineta de Minaya presents genuine saffron, full of culinary and medicinal properties for all food lovers. The saffron flower is very delicate and has to be picked at the early hours of dawn. Later the three red stigmas are extracted from the flower. Despite technological advances, no system has been invented to mechanise this process; they are still hand-picked. Finally the red stigmas are toasted at different temperatures, a very complicated process which is passed on from generation to generation. Nearly two hundred thousand flowers are needed to produce one kilogram of saffron. Saffron flowers require at least one thousand square kilometres of farming land, thus it is not surprising that at certain times saffron reached the same price as gold, and was named red gold. Since the 9th century when Arabs introduced saffron into the Iberian Peninsular the process of harvesting and preparation has been perfected until reaching the utmost quality which we can enjoy today. There have been various literary references to saffron in La Mancha since 1720. However the importance which saffron has on many peoples’ lives can still be shown today through customs; saffron is given to newlyweds to wish them prosperity.

The guaranteeing body of origin from the Mancha recommends that saffron should be packed in threads, never ground, in order to ensure that it has not been mixed with other poorer quality saffron. This way it is possible to preserve its rich aroma (enhancing the ingredients of any dish), flavour (adding a slightly bitter touch) and colour (converting a paella into a festival of colour). Molineta de Minaya saffron has ten times more colouring power than any other additive.

SAFFRON FROM MINAYA:

Minaya is a small village situated in the heart of La Mancha, to the north of Albacete. Until recently most of its inhabitants took an active part in growing and preparing saffron. Planting seeds in spring, and observing the change in landscape from September to November as the saffron flowers bloomed and the penetrating aroma filled every corner of their houses. Both adults and children took part in saffron harvesting, and the days when the flowers were in full bloom they had to call on neighbouring villages to lend a hand, to ensure that all the flowers were picked at the right moment thus preserving the final quality of the saffron.

HOW TO USE SAFFRON:

To fully enjoy the qualities of this product it is recommended to grind a few threads in a mortar, and then dilute them in stock. Saffron is famous for its use in rice dishes; however it can also be used in meat, fish and egg dishes, as well as desserts, diluting the ground threads in milk. Saffron can also be used in hot drinks or teas by adding a touch of saffron before serving. Saffron should always be used in small quantities, and should be stored in an airtight container, protected from sunlight and fluorescent light.
