There are fewer Spanish soft cheeses than hard due to the nature of the terrain producing milk more appropriate for hard cheeses. Finca Pascualete Retorta is a glorious example of idiosyncratic Spanish cheese making at its best; soft and gooey in the centre this unpasteurised ewe’s milk cheese is made with thistle rennet which complements the wonderful, herbaceous nature of this cheese.
