There are fewer Spanish soft cheeses than hard due to the nature of the terrain producing milk more appropriate for hard cheeses. Notwithstanding, however, Basco stocks some wonderful examples of soft Spanish cheese. Finca Pascualete Retorta is a glorious example of idiosyncratic Spanish cheese making at its best; soft and gooey in the centre this unpasteurised ewe’s milk cheese is made with thistle rennet which complements the wonderful, herbaceous nature of this cheese. Our Spanish Brie is one of our best sellers; this is mould ripened cheese is clean and mild in flavour and is aged for 7-8 days.
