Iberico pork presa comes from the Iberico black foot pig. These pigs have a free-range life rooting around the woodland meadows or dehesas of Extremadura, eating acorns and wild plants and laying sweet, nutty fat through their flesh.
It is this that makes the flavour of Iberico pork so distinctive. Presa Iberica is a cut that comes from the head of the loin. It is very tender and benefits from quick cooking over a hot pan, griddle or barbecue to preserve the glorious, tender, melt-in-the-mouth quality of this meat. This meat can be eaten medium-rare.
