Undoubtedly Spain’s most famous cheese, Manchego Cheese comes from La Mancha, in the heart of Spain, and is named after the Manchega sheep whose milk is used to produce the cheese.
Manchego is identified by its distinctive herringbone rind, a nod to the moulds in which Manchego was traditionally made. Our Manchego is made by Quesos HM, a small, artisan producer whose sheep graze on the wild herbs and scrub of the la Mancha plateaux. The Manchego comes in several varieties: semi-cured, which is 3 months old; cured, which is up to 12 months old and Rosemary which is rolled in rosemary leaves and imparts a wonderful, resinous flavour through the cheese. All our Manchego has the distinctive buttery, nutty, flavour going from light and fruity to deep caramel notes as the cheese ages.
