Wagyu; the iconic premium beef product, renowned for its tenderness and flavour, is produced for us by Finca Santa Rosalia.
Here they breed Wagyu beef, famed for its exceptional flavour, texture and health-giving properties. Patxi Garmendia, the finca’s owner, goes to extraordinary lengths to ensure his cattle produces some of the world’s finest beef. Each oxen has over 100 square metres to roam, much of the feed comes from the bi-product of the estate’s organic winery and their bedding is biodegradable. Even their diet is designed to reduce greenhouse gas emissions. The exceptional quality of Wagyu beef comes from the fine marbling of fat throughout the meat, ensuring not only a juicy tenderness but a wonderful flavour.
