Bomba rice belongs to the family of Japonica rices, a short and rounded grain, which tends to elongate during cooking. It is characteristic of the Mediterranean coast, which concentrates most of its production.
Bomba rice absorbs liquid up to the point of doubling its volume. Thus, it retains the flavour of stock in a manner similar to other varieties from Valencia with the advantage that, unlike other International varieties, once exceeded the cooking time it doesn't start breaking but it gets a bombed shape, hence its name.
This peculiarity allows you to save the starch, so it always comes loose, without caking, making it the king rice for perfect paella or risotto style dishes. Despite all these virtues, it is a variety which until recently was almost extinct due to low productivity and the intensive care they need.
Our bomba rice is carefully prepared by Hijos de Vicente Catala Peiro, a family business located in Valencia and one of the oldest companies in its sector. The company's beginnings were in the late 19th century, and its current owners represent the fifth generation to run the business. Its main feature is the great care and attention they take when preparing paella rice, whilst achieving maximum quality in all their products, backed by many years of experience.
