    Fried padron peppers are a perfect, quick and easy tapas dish.
    This fried padron peppers dish adds a bright green colour to any dinner table and a lovely, sweet and salty mouthful to any selection of tapas. Padron peppers best suit simple cooking; just blister in a hot pan with a smudge of olive oil and a generous sprinkle of crunchy sea-salt until wilted and soft. They can be used as an accompaniment to other dishes but shine best on their own.


    1.  Start by making a small cut on the tip of each padron pepper. The cut will prevent the peppers from exploding whilst cooking and will steam the inside, so they cook through better.
    2.  Pre-heat the oil in a large frying pan. Once hot, add the peppers and fry on moderate heat, shaking them regularly so they fry on all sides. They will begin to blister as they turn brown. It takes about 2 to 3 minutes.
    3.  Remove the peppers from the heat and sprinkle with some crunchy sea salt and serve with a cold glass of albariño.
