He regularly runs client food and drink events around the country and he is a course tutor at Hartingtons of Bakewell cookery school. Padron peppers best suit simple cooking; just blister in a hot pan with a smudge of olive oil and a generous sprinkle of crunchy sea-salt until wilted and soft. They can be used as an accompaniment to other dishes but shine best on their own.
