    Weeping Tiger Presa Steak

    Ingredients

    • 1 whole presa ibérica steak, weighing 500g
    • 2.5 tablespoons soy sauce
    • 3 teaspoons fish sauce
    • 1 clove of garlic, minced
    • ¼ tsp ground coriander
    • Freshly ground black pepper
    • For the weeping tiger sauce:
    • 2 tablespoons fish sauce
    • 2 tablespoons tamarind paste
    • 2 tablespoons water
    • Juice of 1 lime
    • 2 teaspoons palm sugar
    • 2 teaspoons toasted rice powder
    • 1 teaspoon dried chilli flakes
    • 1 shallot, finely chopped
    • 1 spring onion, finely sliced
    • 1 fresh red chilli, seeds removed and finely diced
    • 1 handful fresh coriander, picked and finely chopped

    Introduction

    A variation on the classic Thai Weeping Tiger Beef or Crying Tiger Beef using presa ibérica pork. The presa is marinated, then quickly barbecued to medium-rare and sliced up, leaving it extremely tender and full of flavour. It is then served with a delicious weeping tiger sauce that simply pops with flavour just like they do in Thailand. Enjoy!

    Method

    1. To marinate the presa, combine the soy sauce, fish sauce, garlic, ground coriander and black pepper in a mixing bowl. Mix everything together and rub the marinade into the presa steak and leave it to marinate for at least 1 hour.
    2. Pre-heat your barbecue.
    3. For the weeping tiger dipping sauce, combine fish sauce, tamarind paste, water, lime juice and palm sugar in a bowl and mix until the palm sugar has dissolved into the sauce. Add the toasted rice powder, dried chilli flakes, chopped shallot, spring onion, fresh red chilli and fresh coriander to the sauce, mix thoroughly and set aside.
    4. Barbecue your presa steak for 4 minutes on each side for medium rare. Rest the presa for 2 minutes on a board, thinly slice and sprinkle with some sea salt flakes. Serve the presa with the weeping tiger dipping sauce on the side.
