    Cantábrico Anchovies, Goats Cheese Butter and Toasted Brioche

    Want to challenge your taste buds to something different? This is got to be one of my top umami explosions of flavour. Salted anchovies caught in the Cantabrian Sea, served on a thick slice of toasted brioche bread with a slab of goats cheese butter is your answer. The balance of sweetness, saltiness, and creaminess on this pintxo is out of this world.


    1. Pre-heat your oven grill.
    2. Start by removing the crusts of the brioche bread and cutting each slice into two fingers. Toast the brioche fingers on both sides.
    3. Cut the goats cheese butter into thick finger pieces, the same size of the brioche and place one slice of butter on top of each brioche finger.
    4. Please one anchovy fillet on top of each brioche finger and serve with a chilled glass of txakoli.
