Morcilla iberica is made from the wonderful Iberian pig. This animal is known for its melt-in-the-mouth fat which lends wonderful soft, smooth quality to the black pudding. Unlike the Burgos sausage, this morcilla is flavoured with smoked paprika and garlic and does not contain rice. This makes the sausage very light. It is a cured product so can be eaten straight from the pack but really comes into its own when lightly grilled or fried. Then the moist, succulent quality of the iberico fat becomes apparent and give the sausage its light and moreish quality. Morcilla iberica is gluten-free and can be chopped into classic Spanish stews like Fabada Asturias.
