Made with an entire pork loin, lomo is a cured meat that is first rubbed and marinated in smoked paprika before curing for four months. The meat is not chopped nor with any added fat so is lean and succulent making it perfect for a thinly sliced addition to a charcuterie board, a tapas or sandwich filling. The curing and paprika make for a deep and complex flavour.
