Txakoli Blai 2025
Txakoli Blai is a distinctive and naturally sparkling white wine from the Getariako Txakolina Designation of Origin. Made from grapes grown in Getaria and Oñati in the Southern Basque Country. Vinified at the Etxeberria micro-bodega in Astigarraga, it is a fresh, elegant and characterful expression of Basque Txakoli.
The blend is composed of Hondarribi Zuri (90%) (the signature grape of traditional Basque Txakoli), and Riesling from Oñati (10%).
Following a two-week alcoholic fermentation, the wine matures on its lees for four months, developing additional texture and complexity while retaining its characteristic freshness. The natural carbon dioxide produced during fermentation is preserved in an isobaric vat, creating the subtle effervescence associated with this style of Getariako Txakolina.
In the glass, Blai shows a bright yellow colour with brilliant highlights. The nose is fresh, expressive and intense, revealing vibrant aromas of citrus, crisp white fruit and tropical fruit. The palate is lively and refreshing, with bright acidity and a gentle natural sparkle creating an elegant balance between freshness and texture. Its characteristic tangy finish adds energy and length, making it an exceptionally refreshing and versatile style of white wine.

Txakoli (or Txakolina in Basque) has long been associated with the Basque Country, where its naturally fresh, high-acid style developed in the cool, humid Atlantic climate. Traditionally enjoyed young, Txakoli is an integral part of Basque food and culture, particularly alongside the region’s exceptional seafood. Its name and style are closely linked to the historic coastal and inland vineyards of the Basque Country, with Hondarrabi Zuri at its heart.
Today, modern producers combine this distinctive heritage with precise vineyard management and temperature-controlled winemaking, resulting in Txakoli wines that are both unmistakably traditional and remarkably versatile.

Blai is an ideal companion for tapas and pintxo aperitifs, where its lively acidity and gentle natural sparkle refresh the palate. Its citrus-driven freshness makes it especially well suited to grilled fish such as bonito and hake, as well as seafood and ceviche. How to cook with Txakoli Blai 2025
Piperade or piperrada is a classic Basque pepper sauce that goes well with fish and chicken dishes. In this recipe, a whole monkfish tail is roasted and cooked in the sauce very slowly in the oven. The meaty texture of the fish is delicately enriched through the sweet piperade sauce.
