He regularly runs client food and drink events around the country and he is a course tutor at Hartingtons of Bakewell cookery school. This is a great sharing dish that works well as part of a tapas night in. You can have the cheese prepared in advance and simply place in the oven before serving. The best bit of the dish is the roasted garlic paste and how well it works with the melted cheese. It provides depth and makes the flavour turn BIG. You can also use this paste in fillings, sauces, mashed potatoes, brushed on roasted meats or even in sausage rolls! I like to serve it with toasted bread pieces, celery sticks and grilled chorizo sausage but you can serve it with other garnishes of your choice, whole nuts, dried fruits or cured meats.
