Jamon Serrano literally means mountain ham and Martinez Somalo is a member of the Consorcium of Jamon Serrano which guarantees the quality of each ham. Sold off the bone, nothing is wasted. All our serrano hams have an ETG accreditation for Guaranteed Traditional Speciality. The pigs are all 100% Spanish and are selected for their quality. The curing process begins and takes 14 months where all the hams are cured under the careful oversight of the Martinez Somalo ham master. This means that each jamon is cured long enough for a consistent, firm and full flavoured ham.
You can slice your Martinez Somalo boneless serrano ham in a meat slicer. We recommend you slice it well chilled for consistent results. You can also cut your ham into four pieces and vac pac each piece to ensure you seal all of its freshness, opening and using one piece at a time. Remember to always keep your boneless ham in the refrigerator.
Store your boneless ham in the refrigerator. 12 month shelf-life, once opened consume within 30 days. You can also ask your butcher to cut the ham into pieces and vac pac them individually, that way you only use it as you need, keeping each piece fresh. No cooking required. Average weight 5-6Kg. Martinez Somalo (La Rioja)
Martinez Somalo was founded in 1901 by Don Jose Martinez Campo. Don Jose was part of a large family and several siblings were dedicated to the manufacturing and sale of meat products. At that time products derived from the pork raw material and Don Jose would trade them in his hometown and closest villages. The processing plant was called “La Gloria Riojana”.
La Gloria Riojana was at that time a small manufacturing plant located in Baños de Rio Tobia (La Rioja), where the company is located at the moment. The own characteristics of the Baños de Rio Tobia village, at 600 meters above sea level, located in the valley of the river Najerilla and surrounded by mountains, allowed cold winters, hot summers and springs and mild autumns, which created the perfect micro climate that would favour the elaboration and drying of pork derived products.
Since May 2011, the company is being managed by the fourth family generation, maintaining the family spirit, but with the support of valuable and reliable professionals in management positions.
