Navarro Pedro Ximenez Balsamic 15 year old vinegar is made from 100% Pedro Ximenez aged fortified wine from the D.O. Montilla-Moriles, and then kept for another ten years in American oak casks in a Solera and Criaderas system with a regular blending from cask to cask.
This balsamic vinegar has a rich sweetness characteristic of classic balsamics. What sets this vinegar apart is the Pedro Ximenez grape - slowly dried in the sun to concentrate the sugars, it has distinct flavours of crushed raisins and Christmas cake.
Ideal as an ingredient in cold and warm salads, meat stews, as a reduction in sauces and simply mixed with olive oil and served with crusty bread.
The origins of the Navarro wineries date back to 1830, when José Antonio Navarro started to apply all the knowledge in the elaboration of the Montilla-Moriles wines he had inherited from previous generations to his own production of wine.
