Description
Quesería Prestes are a family business founded in San Simón (Vilalba, Lugo) in 1991, when it began producing the first pieces of cheese called San Simón da Costa.
In the 2000s, Prestes established itself as a cheese factory. Its presence at gastronomic events, tastings, competitions (Alimentaria, Salón del Gourmet or Anuga) and achieving prestigious international awards, such as the World Cheese Awards, allowed it to make a name for itself in the cheese market as a leading company.
Hailing from Galicia, San Simon Da Costa cheese has a conical shape that is immersed in hot whey to seal the outside and prevent moulds growing. Traditionally smoked over birchwood chips, where it gets its smoky flavour and nutty aftertaste before ripening further for 1-2 months.
The exterior of the cheese is a rich ochre colour while the interior paste is semi-firm and smooth with occasional holes and pale yellow in colour. Flavours are fairly mild and sweetly earthy with tastes of butter and delicate smoke. A delightfully smooth cheese, it is perfect on its own or melted on burgers, sandwiches and salads.
