Picos blue cheese also known as Valdeon is one of Spain’s most iconic blue cheeses. Usually a mixture of cow’s and goat’s milk and occasionally ewe, this cheese has an intense, fruity flavour with a buttery, creamy paste. Made by two brothers, Tomás and Javier Alonso, who have 35 years’ experience making this cheese, it is matured for 2 months before being wrapped in vine leaves.
