    Smashed Galician Burgers

    Ingredients

    • 800g minced Galician ex-dairy cow Txuleta steak
    • 4 brioche burger buns, halved
    • 8 slices American cheese
    • ½ small iceberg lettuce, finely shredded
    • 12–16 gherkin slices
    • 1 small white onion, finely sliced
    • Sea salt
    • For the “Secret” Sauce:
    • 150g mayonnaise
    • 1 tbsp ketchup
    • 1 tbsp yellow mustard
    • 1 tsp Worcestershire sauce
    • ½ tsp garlic powder
    • ½ tsp onion powder
    • ½ tsp smoked paprika
    • 2 tbsp finely chopped onion
    • 2 tbsp finely chopped gherkins

    Introduction

    A double-stacked, crispy-edged burger made with aged Galician Txuleta beef – rich, juicy and unapologetically indulgent. Use a ripping hot plancha or cast-iron pan – that intense heat is what gives you those crispy, lacy edges that make smashed burgers unbeatable.

     

    Method

    1. In a bowl, mix all the sauce ingredients together until smooth. Taste and adjust seasoning if needed. Chill in the fridge while you prepare the burgers.
    2. Divide the minced Galician beef into 8 loose balls (around 100g each). Don’t overwork the meat – keep it light for that perfect smash.
    3. Lightly toast the brioche buns cut-side down on a hot plancha or frying pan until golden. Set aside.
    4. Heat a heavy frying pan or plancha until very hot. Place the beef balls onto the surface and smash them down firmly with a spatula until thin. Season with sea salt. Cook for 1–2 minutes until crispy and caramelised.
    5. Flip each patty and immediately top with a slice of American cheese. Cook for another 30–60 seconds until melted.
    6. Spread a generous layer of sauce on the base bun. Add shredded lettuce, onions and gherkins. Stack two cheesy patties Finish with more sauce on the top bun. Close the burger and serve immediately while hot and juicy.
