Martinez Somalo Mini Cooking Chorizo is produced in La Rioja, one of Spain’s most renowned chorizo-making regions, using traditional recipes and carefully selected pork.

Riojan Chorizo is a traditional variety produced in La Rioja, where the region’s unique climate has made it the ideal location for curing chorizo for generations. It is recognised for its vibrant red colour, soft texture and rich, smoky flavour. Since 1990, Riojan Chorizo has been protected by I.G.P. (Protected Geographical Indication) status, helping to preserve its authenticity and traditional production methods.

Spanish Chorizo is made from coarsely chopped pork and pork fat, seasoned with smoked pimenton and salt. It is generally classed as either Chorizo Picante (spicy) or Chorizo Dulce (sweet), depending on the variety of paprika used. Across Spain there are hundreds of regional styles, ranging from firm, cured chorizos enjoyed as part of a tapas selection to softer cooking chorizos like these, which release their rich flavour when heated.

These delicious bite-size sausages have been semi-cured for only four days. The result is a softer sausage that retains its moisture whilst becoming beautifully crisp when cooked. The key to great Spanish chorizo is premium smoked paprika, which gives these mini chorizos their rich colour, distinctive aroma and authentic flavour.

Conveniently packed in a 300g retail pack, these mini cooking chorizos are incredibly versatile and suitable for all types of cooking. Pan-fry, grill, roast or barbecue them for an authentic Spanish flavour that’s ready in minutes.

It is also an ingredient used in many traditional Spanish dishes, where it accompanies beans, lentils and potatoes, such as Fabada Asturiana, Cocido Madrileño, Lentejas con Chorizo and Patatas a la Riojana. These hearty recipes often include other traditional pork products such as Tocino (cured bacon) and Morcilla (blood sausage), collectively known as Sacramentos, which are served alongside the cooked chorizo. Mini cooking chorizo is also delicious in Chorizo al Vino, a classic Spanish tapa where the sausages are gently simmered in red wine until tender and coated in a rich, flavourful sauce.
