A truffle's quality mainly depends on product freshness, from the harvest to the table. An exhaustive cleaning and a manual selection process according to its colour, aroma, maturity grade and size precedes vacuum-packing in order to keep its fragrance and unparralled flavour.
Our preserved whole truffles only have salt and water added before the sterilization process. Through this process, the truffle loses around 10%-30% of its weight; however it gives out a unique truffle juice. Truffle juice has countless utilities in high gastronomy, but it is not very well-known yet.
