An unusual salami style sausage, made by Embutidos Melsa in Graus.
The secret is simple, selecting the best ox meat from Valle de Esla in Leon, one of the few extensive ox farms in Europe. This cured ox salchichon is made from natural ingredients, processed by knife and a careful monitoring process when curing in the cellar. The result is an incredibly flavoursome and powerful sausage coming from the ox beef used, which will make you come back for more.
Our ox salchichon weighs around 220g which makes it comfortable to use at home. Slice it very thinly at room temperature and serve it with olives and a big Spanish red wine.
