Bayonne ham or jambon de Bayonne is an air-dried salted ham that takes its name from the ancient port city of Bayonne in the South West of France, a city located in both the cultural regions of Basque Country and Gascony.
This culinary pride of Southwestern France is viewed by many as the Champagne of ham. The result of a thousand years of expertise in raising pigs and curing their meat has resulted in a product that is described as the flower of French gastronomy.
Our boneless Bayonne ham is made by family business Maison Mayte, only using the most traditional methods to create a delicious savoury dry-cured ham. This boneless variety stays fresh in the refrigerator for several weeks. Keep it on hand to add the flavour of France to your everyday: slice it up and share with friends, make delectable sandwiches, or carve off chunks for soups, salads, meat and cheese snacks. Use extra trimmings as seasoning for pasta, rice dishes and stews.
Bayonne Ham has an IGP status making producers follow strict regulations. This French Basque air dried ham can only come from one of eight clearly defined breeds of pig reared in an area between Deux Sevres in the North to Aveyron and the Aude.
Our Boneless Bayonne ham has been carefully cured for 10 to 12 months to bring out the most nuanced, natural flavour. All our Bayonne hams are marked with the traditional Basque Cross or Lauburu and the name Bayonne. A quality seal that guarantees the authenticity of the product and the tradition behind it.
Bayonne ham is a slightly sweet, delicately flavoured ham with little salt to the taste. It is generally cut very thin to enjoy with some crusty bread, cheese and a glass or two of red wine.
Somewhat sweeter than Parma, Prosciutto or Serrano ham, Bayonne ham is an excellent item to keep handy in the kitchen. But we have to warn you that jambon de Bayonne is addictive; once it passes your lips, you swear you'll eat it every day.
Store your Boneless Bayonne Ham in the refrigerator. 12 month shelf-life, once opened, consume within 30 days. You can also ask your butcher to cut the ham into pieces and vac pac them individually, that way you can only use it as you need, keeping each pieces fresh. No cooking required. Average weight 5-6Kg. Product includes Free Delivery.
