Hand-Made Ewe's Milk Smoked Cheese From Basque Country
Idiazabal Cheese is made in the Basque region by a small, family producer. The cheese is made using unpasteurised ewe’s milk and then aged for 4 months before being smoked over beech, birch and cherry wood chips. The cheese has a dense, creamy paste with a light smoky finish.
