Hand-Filleted Cantabrian Boquerones
These anchovy fillets are caught off the coast of Cantabria in northern Spain. They are the same species of fish as anchovies only. They are not heavily salted but are hand filleted and marinated in white wine vinegar and extra virgin olive oil to enhance their intense but delicate flavour.
